Mocha Frappe – LOVE!

My hubby and I took a road trip through the Colorado mountains on the weekend and after driving for a while I had this sudden and urgent taste for something cold and sweet. I didn’t want to deal with melting ice cream in the car so we got a Mocha Frappe at the McDonald’s drive-thru. After we both had a first taste none of us wanted to give it out of our hands – it was sooooo good – and gone within minutes!

I thought there must be a (cheaper) way to replicate the drink at home and I found this awesome recipe and step-by-step instructions by Swistle! As soon as I get my blender back (we are in the middle of moving) I will give this a try. Bad news: during my research today I found out that the McDonald’s Mocha Frappe (which I had just crowned my new favorite road food drink) has 560 calories! Good news: Swistle’s version has only half of it, yay!

my favorite springtime pie!

I decided to start the recipes category with my favorite pie. It’s light and fruity and perfect for springtime. And the best thing is you can make it in any flavor you want: strawberry (all-time favorite in my house), key lime (mmh, comes right after strawberry), raspberry (nice and tangy) etc.

I originally got this recipe from a Keebler Ready Crust package but I edited it to make it a bit more healthy (and tasty – in my opinion). So here we go:

Ingredients: pie-crust, 17.6 oz / 500 g greek yoghurt (2%), 1 pack (4 servings) strawberry Jello, 1/2 cup of cold water, 4 oz Cool Whip light, 1 pack of strawberries

  1. For the pie crust you can either use a ready-made one, like I do if I don’t have much time (I like the reduced fat versions because I think they have just as much flavor as the full-fat version), or you can make the crust yourself, for example this way
  2. Bring water to a boil, take it off the stove, dissolve Jello in it, let cool down
  3. In a big bowl, mix greek yoghurt and Cool Whip
  4. Dice the strawberries (the smaller the pieces the easier to cut the pie)
  5. When the Jello is lukewarm, stir it into the yoghurt / Cool Whip mix and add the diced strawberries
  6. Pour into the pie crust and refrigerate for at least 4 hours – Done!

By the way – it’s also a wonderfully light dessert without the pie crust if you just pour it into little bowls and serve it with a cookie. ENJOY!
